A roasted young/suckling pig, usually between three to four months old. It is prepared and cooked similarly as the Filipino favorite, lechon (roasted pig). Lechon de Leche is considered a “premium” lechon.
In some areas in the Philippines, Lechon de Leche refers to a roasted pig (regardless of the age of the pig) that was treated with milk during roasting. The milk is applied to the skin of the roasted pig by a paint brush or an improvised brush made of banana leaf.
Lechon De Leche is a Spanish term which literally means “roasted pig with milk.”
