Longganisa

Local sausage stuffed with ground pork, pepper, saltpeter, salt, sugar, crushed laurel leaves, and some preservatives.

Some Philippine provinces have developed their own distinct longganisa flavor and have gained popular following such as the Vigan Longganisa of Ilocos Norte, the Lucban Longganisa of Quezon, the distinctively sweet Pampanga Longganisa, etc.

From the spanish word, chorizo, which translates to sausage.
